3 large Boneless Skinless Chicken Breasts (double recipe to make more)
We had this tonight, the flavor was amazing and I will be adding this to our menu. I think next time I am going to do it with the olive oil as chicken is always more tender when basted in olive oil. Enjoy~
When I was in Colorado, my niece Kristen Iverson made this for supper one night for me, it was SO good! I had never had spaghetti like this before, and it was honesty to die for. When I got home, she sent me the recipe, and I made it that night. YUM! I had lots of jars of canned tomato sauce that was already seasoned with the spices below and putting dinner together that night was a breeze~ Then, my husband tells me, umm I love this, can you make it like this from now on... lol so now this is a staple in our menu plan. I hope you enjoy as much as we do.
1 pound hamburger
1 onion (diced)
1 pound bacon
1 QT homemade tomato sauce (or) 2 jars meaty spaghetti sauce from store
1 TS minced garlic
1 can mushrooms (stems and pieces) optional
1 can diced tomatoes
1 package spaghetti noodles
If you are using 2 jars of the meaty spaghetti sauce (or plain tomato sauce)
2 Bay leaves
1 TS oregano
Salt and Pepper to taste
Parmesan for topping!~
Okay, onto how to put it together. I used 1 QT of my homemade tomato sauce (canned) you can see the video on that below. Brown your hamburger with 1 TS minced garlic and diced onion. (leave it in bigger chunks) set that aside when hamburger is completely cooked through. Cut bacon into very small bite size pieces and fry until soft with a little crisp. In another large pot, add cooked hamburger and onion, bacon, and other spices, 1 can diced tomatoes and mushrooms, add tomato sauce to cover, and stir. Cook on stove top till your noodles are finished. (follow directions for noodles on package. (if you are using plain tomato sauce) simmer for 30 min.
If using bay leaves (remove) add noodles to sauce and enjoy~
Oh my goodness Crockpot Parmesan Potatoes.
3 Pounds potatoes (cut into chunks)
3 TB olive oil
1 ts oregano
1 ts basil
4 TB butter
1/4 cup Parmesan
3 TB minced garlic
Salt and pepper to taste
Place potatoes in crockpot, add 3 TB olive oil, basil, oregano, salt and pepper, and stir. Place 4 TB butter on top of potatoes. When potatoes are about 15 min from being done, add Parmesan cheese, and mix. place lid on crockpot and continue cooking 15 min.
Crockpot time: high 5 hours, Low 6 hours (or until potatoes are soft to your liking :) Note: Taste a potato after adding the parmesan, add more salt if needed.
Anything made from scratch is always better, and the taste is out of this world, and you know exactly what is in it. No Msg, No Gmo's etc, and to be completely honest it's just better for you. I took 80 pounds of tomatoes (straight from the vine) and made these 12 QT jars (and one pint) of goodness. I made bacon spaghetti (recipe coming soon) with 2 of the jars last night and omgosh it was so good! The best part, I didn't have to let it cook down, or add spices or anything, the tomato sauce was seasoned when canned,
So it only took me 30 min to get dinner together and everyone loved it! I had to laugh because once I made the bacon spaghetti my husband told me he didn't want it any other way. When I was up in Colorado my niece Kristen Iverson, made this for me during my visit and like a fish, I was hooked! Then when I got home, a neighbor of ours, (has an amazing and I do mean wow) kind of garden. .
We purchased 80 pounds of tomatoes, Okra, and beans. I was so busy for 3 days canning and freezing. We got another 80 pounds at .25 each and it was round 2 and my tomato sauce was born. lol... Try this recipe you will love it as much as we do. Hope you have a great week!
