I can't say enough about this recipe! so full of flavor and taste. Your family will definitely ask you for the recipe! I can only imagine if you added crumpled bacon on top! This is a hearty soup great for anytime of the year serve with salad and bread and you have a meal your family will go crazy for. See recipe below. Enjoy~
5 cups diced potatoes
1/2 cup diced ham (or more if you like)
4 cups chicken broth
2 packets Flavor Boost (chicken flavor)
1 med onion diced
4 Tablespoons butter
2 Tablespoons olive oil
3 cups water
1 TB salt
1 can peas & carrots (or 1 can of carrots and 1 can of peas)
1 cup swiss cheese
1 cup Fiesta Shredded cheese
Crumpled bacon (if desired)
onion, ham and celery until celery becomes soft and onions are almost translucent. (about 15 min) continue to stir as they saute.
Add Chicken broth, 2 cups water, and chicken flavoring, and pea's & Carrots (you can also use bouillon cubes or powder.)
simmer on med heat until potatoes are fork tender.
Add 1 cup Swiss cheese, and 1 cup Fiesta shredded cheese, stir until combined. Top with crumbled bacon if desired)
Serve hot with salad and crusty bread.
