Have you ever just wanted real chicken gumbo soup, homemade, and easy to make? This recipe is just that and so wonderful that it reminds me of my child hood. You just got to try it. It's honestly the best I have ever made and tasted.
4 large chicken breast
1 12 oz bag of cooked medium shrimp
2 cups Okra (I used about 2 1/2 cyps we love it!
1 package smoked sausage
2 Tablespoons Chopped Jalapeno (I used jarred no seeds)
3 Celery Stocks sliced 1/2 inch to 1 inch
1 medium can diced tomatoes (with liquid)
2 Tablespoons tomato paste
8 cups Chicken broth (or enough to cover)
1/4 cup olive oil plus 2 TB (divided)
1 1/2 cup instant rice
2 tablespoons garlic/pepper (divided)
2 Tablespoons onion salt (divided)
1 teaspoon pepper
1 Tablespoon salt (less if you don't like a lot of salt) salt to taste.
1 Tablespoon Garlic powder
In a large skillet, pour 1/4 cup olive oil and place chicken, add 1 TS Garlic powder, onion salt, and pepper to each side of the chicken, cook until done, but do not brown. Dice when cooked. In another deep pot add the following, Shrimp, okra, slice sausage 1 inch thick and add to pot, 2 TS Jalapeno, Add diced celery, with 2 TB olive oil (more if needed) Saute until wilted but do not brown. Add 2 Tablespoons of Tomato Sauce, 1 Tablespoon garlic/pepper, 1 Tablespoon onion salt, 1 teaspoon pepper, and can of diced tomatoes undrained. Stir and add 8 cups of chicken broth, or enough to cover, bring to a boil 30 min before it is done add rice and simmer for 1 hour.
Note: This is the best chicken gumbo I have ever made, you will want to make this one again and again... it's that good!
